Langoustine marinated in white balsamic vinegar on carrot and ginger cream

Starter
Smoked char tartare with mango sauce, ricotta and flax seed wafer

First Courses
Carnaroli rice from Pavia sautéed in champagne with red prawns, mussels and the aroma of Garda lemons

Braised beef tortelloni pasta with mountain butter and wafers of grana cheese and poppy seeds

Main Course
 “Peters Farm” filet of veal cooked at low temperature with black truffle sauce, potato torte and pumpkin seeds

Dessert
Crème brulée with lime and ginger mascarpone

Around midnight- Happy New Year
Zampone and lentils

Panettone with vanilla cream
